Curried Chicken
This whole concept is very Middle Eastern. This is to be stuffed in the Basic Crepes.
INGREDIENTS
- 1 recipe Basic Crepes
- ½ pound chicken breast, poached for 10 minutes, or leftover cooked chicken, minced
- ½ cup gluten-free, casein-free plain soy yogurt
- 2 teaspoons curry powder, or to taste
- ¼ cup mango chutney
Stack the crepes with waxed paper between them. Mix together the chicken, curry powder, and chutney. Place a spoonful of the chicken curry mixture on a quarter section of each crepe.
Fold in quarters. Place on a platter and serve.
