Curried Chicken

This whole concept is very Middle Eastern. This is to be stuffed in the Basic Crepes.

INGREDIENTS

  • 1 recipe Basic Crepes
  • ½ pound chicken breast, poached for 10 minutes, or leftover cooked chicken, minced
  • ½ cup gluten-free, casein-free plain soy yogurt
  • 2 teaspoons curry powder, or to taste
  • ¼ cup mango chutney
  1. Stack the crepes with waxed paper between them. Mix together the chicken, curry powder, and chutney. Place a spoonful of the chicken curry mixture on a quarter section of each crepe.

  2. Fold in quarters. Place on a platter and serve.
