Creamy Spinach Mini Pizzas
Creamed spinach takes the place of traditional pizza sauce in this alternative Italian-style pie.
INGREDIENTS
- Gluten-free bagel
- ¼ cup Creamed Spinach
- 2 slices tomato
- 1 tablespoon gluten-free, casein-free soy Parmesan cheese (optional)
Cut bagel in half, and toast.
Spread spinach on each bagel half.
Top with tomato.
Sprinkle on Parmesan if using.
Broil for 2 minutes; watch to prevent burning.
