Creamy Spinach Mini Pizzas

Creamed spinach takes the place of traditional pizza sauce in this alternative Italian-style pie.

INGREDIENTS

  • Gluten-free bagel
  • ¼ cup Creamed Spinach
  • 2 slices tomato
  • 1 tablespoon gluten-free, casein-free soy Parmesan cheese (optional)
  1. Cut bagel in half, and toast.

  2. Spread spinach on each bagel half.

  3. Top with tomato.

  4. Sprinkle on Parmesan if using.

  5. Broil for 2 minutes; watch to prevent burning.
