BBQ Fish

There are many fish whose depletion is endangering the environment. Some of the most common and environmentally friendly fish are Alaskan wild salmon, white sea bass, U.S.-farmed tilapia, and U.S.-farmed catfish.

INGREDIENTS

  • 4 fillets of Alaska longline cod
  • 1 cup gluten-free, casein-free barbecue sauce
  • 12 slices onion
  1. Preheat oven to 350ºF.

  2. Lay out 4 pieces of foil or parchment paper, each large enough to wrap around one fillet.

  3. On each piece of foil or parchment paper, spread out ¼ cup barbecue sauce and 3 slices of onion, then lay a fillet in the center.

  4. Fold up foil or paper and bake for about 10–15 minutes.
