Vanilla Maple Rice Pudding
Serve a scoop of this pudding warmed with some blueberries on the side.
- 1 cup Arborio rice
- 4 cups gluten-free, casein-free soy milk
- ½ cup pure maple syrup
- 2 tablespoons gluten-free vanilla
Preheat oven to 325ºF.
In a small saucepan, bring soy milk, maple syrup, and vanilla to a boil.
Combine liquid and rice in a covered 2-quart casserole.
Bake 1 hour.
