Vanilla Maple Rice Pudding

Serve a scoop of this pudding warmed with some blueberries on the side.

INGREDIENTS

  • 1 cup Arborio rice
  • 4 cups gluten-free, casein-free soy milk
  • ½ cup pure maple syrup
  • 2 tablespoons gluten-free vanilla
  1. Preheat oven to 325ºF.

  2. Rinse rice.

  3. In a small saucepan, bring soy milk, maple syrup, and vanilla to a boil.

  4. Combine liquid and rice in a covered 2-quart casserole.

  5. Bake 1 hour.
