Pineapple Coconut Rice Pudding

With these three ingredients in the pantry, making this tasty, wholesome dessert is a snap.

INGREDIENTS

  • 1 (15-ounce) can coconut milk
  • 1 (15-ounce) can crushed pineapple in juice
  • 1 cup Arborio rice
  1. Preheat oven to 325ºF.

  2. In a small saucepan, bring coconut milk and crushed pineapple with juice to a boil.

  3. Rinse rice.

  4. Combine rice with liquid in a covered casserole.

  5. Bake 1 hour.
