Pineapple Coconut Rice Pudding
With these three ingredients in the pantry, making this tasty, wholesome dessert is a snap.
- 1 (15-ounce) can coconut milk
- 1 (15-ounce) can crushed pineapple in juice
- 1 cup Arborio rice
Preheat oven to 325ºF.
In a small saucepan, bring coconut milk and crushed pineapple with juice to a boil.
Combine rice with liquid in a covered casserole.
Bake 1 hour.
