Chocolate Frosting

Chocolate frosting is the perfect topping for either Vanilla Cupcakes or Chocolate Cupcakes.

INGREDIENTS

  • 2 tablespoons gluten-free, casein-free shortening
  • 2 tablespoons gluten-free, casein-free margarine
  • 2 teaspoons gluten-free vanilla
  • 2–3 tablespoons gluten-free, casein-free soy milk
  • ¼ cup cocoa
  • 2¼ cups powdered sugar
  1. In a food processor, combine shortening, margarine, vanilla, and 2 tablespoons soy milk.

  2. Add powdered sugar and cocoa and combine until smooth.

  3. If frosting is too thick, add remaining soy milk and process until smooth.

MAKES 2½ CUPS (FROSTS 12 CUPCAKES)
