Chocolate Frosting
Chocolate frosting is the perfect topping for either Vanilla Cupcakes or Chocolate Cupcakes.
INGREDIENTS
- 2 tablespoons gluten-free, casein-free shortening
- 2 tablespoons gluten-free, casein-free margarine
- 2 teaspoons gluten-free vanilla
- 2–3 tablespoons gluten-free, casein-free soy milk
- ¼ cup cocoa
- 2¼ cups powdered sugar
In a food processor, combine shortening, margarine, vanilla, and 2 tablespoons soy milk.
Add powdered sugar and cocoa and combine until smooth.
If frosting is too thick, add remaining soy milk and process until smooth.
MAKES 2½ CUPS (FROSTS 12 CUPCAKES)
