Cherry Apple Coconut Rice Pudding
Since frozen cherries already have the pits removed, using them dramatically limits the prep time in this dish. You can make this dish a little lighter with light coconut milk if needed.
- 1 cup Arborio rice
- 1 (15-ounce) can coconut milk
- 1 cup frozen cherries, thawed
- 1 cup chunky applesauce
Preheat oven to 325ºF.
Combine all ingredients in a covered casserole.
Bake 1 hour.
