Broiled Pineapple and Vanilla Frozen Yogurt

This “dessert” provides protein, calcium, and vitamin C.

INGREDIENTS

  • 8 ounces gluten-free, casein-free vanilla soy yogurt
  • 1 cup pineapple chunks
  1. Transfer yogurt to a freezer-safe container.

  2. Freeze for 1 hour, stir, and return to freezer.

  3. Preheat oven to broiler setting.

  4. Broil pineapple until slightly browned, approximately 10 minutes.

  5. If yogurt is frozen too hard, let sit on counter for a few minutes to soften. Stir in pineapple chunks before serving.
