Sushi Rice with Dried Anchovies and Shredded Nori for Dogs Recipe

This recipe is an ode to Japanese-style cuisine. It combines commonly used ingredients that are highly nutritious and packed with vitamins and minerals.

  • 2 teaspoons virgin olive oil
  • 2 cloves garlic, chopped
  • 1 cup sushi rice
  • 2 cups plus 1 tablespoon organic chicken broth
  • 1 tablespoon unsalted dried anchovies, crumbled
  • 2 tablespoons nori
  1. Heat the olive oil in a heavy saucepan over medium heat. Add the chopped garlic and sauté till light brown. Add the rice and cook 1–2 minutes until the rice is translucent.

  2. Add 2 cups chicken broth and bring to a boil. Cover and cook at a very low simmer for 30 minutes or till chicken broth is absorbed.

  3. While the rice is cooking, crumble the dried anchovies into the remaining tablespoon of chicken broth. Microwave for 23 seconds; stir to break up and dissolve the dried anchovies. Set aside.

  4. Using a very sharp knife, cut the nori into fine slivers to resemble confetti. Set aside.

  5. When the rice is cooked, add the anchovy chicken broth and stir until combined.

  6. Flake the rice with a fork and toss with kibble, adding extra chicken broth if desired.

  7. Sprinkle 2 teaspoons of the finely chopped nori over each portion and stir once more before serving.

Nori

Nori is the Japanese name for edible sea-weed that has been dried and processed into sheets. Nori is used in sushi rolls and can also be eaten on its own or crumbled on top of rice, salads, and entrées. Available in sheets and shredded flakes, nori is rich in calcium, zinc, and iodine. Nori is naturally salty and should be eaten in limited amounts by individuals on a restricted salt diet.
