Venison Liver and Bacon for Dogs Recipe
Venison liver should be well cleaned and should not contain any spots or discolorations. Soaking it in milk or water helps remove excess blood. Change the liquid several times and allow the liver to soak for at least 2 hours.
YIELDS ► 16 servings
SERVING SIZE ► 2 tablespoons
- ½ pound venison liver, cut into cubes
- 1 cup organic milk
- 1 slice nitrite-free/nitrate-free bacon, preferably Applegate Farms
- 4 cloves garlic, chopped
- 2 tablespoons unbleached flour
- 1 cup wild rice, cooked
- ¼ cup organic beef broth
Soak liver cubes in milk or water for at least 2 hours, changing the liquid periodically.
Drain the cubes and pat them dry with a paper towel.
Cut the bacon into 1-inch pieces. Add the bacon and garlic to a hot skillet and sauté till the garlic turns light brown.
Spread the flour on a piece of waxed paper and thoroughly coat each venison cube with flour. Raise the heat to medium-high and sauté the venison cubes until they have a nice brown crust on all sides, about 5 minutes.
Drain the fat from the pan and mix in the wild rice and beef broth. Serve over kibble, thinning with more beef broth if desired.
Scissors in the Kitchen
Even if you don't own a pair of kitchen shears, a pair of regular scissors can come in very handy. Use scissors to cut meats, bacon, pasta, pizza, and fresh herbs. If all else fails, they're perfect for opening stubborn bags and packages. Wash them thoroughly after each use, and run them through your dishwasher at least once a week.
