Ground Pork and Lamb Patties for Dogs Recipe
Pine nuts, also known as pignoli in Italian, are the edible seeds of pine trees. Pine nuts contain the highest protein level of any nut and are also a good source of fiber. Look for them in Italian markets and in Middle Eastern groceries. Keep them refrigerated. Once opened, pine nuts can turn rancid quickly.

- 1 organic egg, beaten
- ¼ pound ground pork
- ¼ pound ground lamb
- 2 tablespoons Italian parsley, chopped
- 1 tablespoon fresh mint, chopped
- 2 tablespoons pine nuts
- ½ cup long-grain rice, cooked
- 2 tablespoons virgin olive oil
Combine the egg, pork, lamb, parsley, mint, pine nuts, and rice in a bowl. Use your hands or a spatula to mix all ingredients thoroughly.
Pat the lamb and pork mixture into small burgers. Heat the olive oil in a heavy skillet and add the patties. Cook for 5 minutes per side until they are brown and nicely crusted.
Use a fork to break apart the patties and serve over kibble, thinning with more vegetable broth if desired.
Pine Nuts
Covered in a hard shell, pine nuts are actually seeds of the pine cone and are not technically nuts at all. Pine nuts can be pressed to extract pine nut oil, a mild nutty oil that is believed to be an appetite suppressant and have anti-oxidant qualities.
