Chicken Cacciatore for Dogs Recipe

A traditional Italian chicken dish, cacciatore is referred to as “hunter style.” Cacciatore is an Italian word meaning “hunter.”

  • 3 chicken thighs, skin removed
  • 2 tablespoons unbleached flour
  • 1 tablespoon virgin olive oil
  • 2 cloves garlic, sliced into chunks
  • 1 carrot, peeled and finely chopped
  • ¼ cup crushed tomatoes
  • 2 tablespoons organic chicken broth
  1. Rinse the chicken and pat it dry with paper towels. Spread the flour on a piece of waxed paper, and coat the thighs thoroughly.

  2. Heat the olive oil in a heavy skillet over medium-high heat. Add the chicken pieces and cook until they are browned and a nice crust has formed. Turn the chicken when it no longer sticks to the pan. Remove the chicken to a plate.

  3. Use a wooden spoon to scrape the brown bits off the bottom of the pan, and add the garlic and carrots. Cook until the vegetables are soft and caramelized. Add the crushed tomatoes and chicken broth. Return the chicken pieces and any juices to the skillet.

  4. Lower the heat, cover, and cook at a gentle simmer for 20 minutes, stirring occasionally to make sure the chicken doesn't stick and the tomatoes don't burn.

  5. If the sauce is too thin, remove the cover and cook for a few minutes to thicken. When chicken is cool enough to handle, tear it into bite-size pieces and add them back to the tomato mixture.

  6. Serve over kibble with a little extra chicken broth.
