Yogurt with Melon by Shana Priwer and Cynthia Phillips
Cantaloupe and honeydew are mild in flavor, and mix well with yogurt. If your melons aren't ripe enough to mash easily, purée in the food processor before blending with yogurt.
1 Serving
1 slice honeydew or cantaloupe
3 tablespoons whole-fat yogurt
Cut a thin slice of a ripe melon, and remove all seeds. Slice the fruit off of the rind and fork-mash on a plate.
Blend in the yogurt with a spoon. Mix thoroughly.
Leftover Melon
Most babies will not consume an entire honeydew at a week's worth of sittings, much less a single meal. For the grownups, try slicing up the leftovers and serving with a thin piece of prosciutto on top. Children like the fun shape of melon balls — use a melon-ball tool or, if your children are big eaters, an ice-cream scoop!
