Chicken and Peach Mash by Shana Priwer and Cynthia Phillips
This dinner-dessert combo is a great meal to make from leftovers. Whenever you're making chicken and rice for the rest of the family, reserve some lightly spiced (or unseasoned) leftovers for baby. You can also substitute apricots for peaches, as long as the fruit is very ripe and easy to peel.

½ cup cooked chicken
¼ cup white or brown rice, cooked
½ very ripe peach
Slice the peach in half, removing the pit and any hard parts around the pit.
Using a spoon, scoop the peach flesh out of the skin. Mash with a fork; then drain the leftover juice into a small dish.
Dice chicken. Add to a plate with the peach.
Add rice. Fork-mash until the mixture is well combined.
Add the leftover peach juice as necessary to thin the mash. If it's still too thick, add either extra peach juice, breastmilk, or formula, one tablespoon at a time, to make the mixture smoother. Continue mashing until smooth. Alternatively, purée in food processor for a smoother consistency.
Apricots and Peaches
Like peaches, apricots are stone fruits that, when ripe, have a very high moisture content. That means when you're fork-mashing, expect juice to come running out. Peach recipes can generally use apricots as a substitute, but make sure to double or triple the amount of fruit, because apricots are considerably smaller than peaches.
