Sweet Potato and Avocado Purée by Shana Priwer and Cynthia Phillips
Sweet potatoes are one of the most nutrient-dense vegetables around. Mix with avocados, and you've got one terrific healthy meal for your baby. Leftover avocado will likely oxidize and turn brown in the refrigerator, but you can sprinkle a bit of lemon juice over it to slow the process. Scoop off the lemony part before feeding, and use the remaining avocado within 1–2 days.
3 Servings
½ sweet potato
2 cups water
¼ avocado
3 tablespoons water, breastmilk, or formula
Cut the sweet potato into small pieces. Cover with water in a pot, and boil until the potato is very tender.
Fork-mash the avocado until smooth.
After the potato cools, mix with the avocado and fork-mash together.
Add water or formula, 1 tablespoon at a time. Continue mashing until the mixture is smooth.
Sweet Options
Sweet potatoes can be safely cooked in a variety of ways. If you're planning to serve the leftovers at a meal for the rest of your family, consider baking the potatoes in the oven so that the skins take on a nice, crispy texture. Steaming in a shallow pan of water is also fine. After cooking, insert a knife into the potato. If the potato falls off the knife, it's done.
