Puréed Cauliflower by Shana Priwer and Cynthia Phillips
Cauliflower contains many cancer-fighting nutrients, so start your baby off on the right foot with this tasty recipe!
3 Servings
1 cup cauliflower
2 cups water
Wash the cauliflower thoroughly. Discard the stem and leaves and chop the florets into small pieces.
Put into a steamer basket. Bring to a boil and steam until tender, about 20 minutes.
Place into a food processor or blender, and purée for 30 seconds. Add liquid as necessary to achieve desired consistency.
To Stem or Not to Stem?
With vegetables such as broccoli and cauliflower, most adults cook and consume both the stems and the florets. When puréeing for a young baby, though, the purée will be smoother if you omit the tough stems.
