Creamy Fruit Gelatin
4 Servings
Peel the orange. Divide into sections, remove as much of the white skin as possible, and dice into small pieces.
Bring 1 cup of water to a boil in a medium saucepan. Stir in the gelatin and cook until completely dissolved. Remove from the heat.
Stir the cream cheese to soften it, and mix it into the hot gelatin. Stir until the cream cheese is completely dissolved.
Whip the whipping cream using an electric mixer. Alternatively, use 1 cup of whipped regular or nondairy topping. Stir into the gelatin mixture, mixing well. Add in the orange pieces and stir to mix.
Pour into a lightly greased gelatin mold or dish. Refrigerate until set, about 5–6 hours.
