Chocolate Banana Custard

Chocolate and bananas make a fantastic combination, so this custard should come as no surprise! If you find yourself with leftover melted chocolate, try coating a banana with it and freezing for a couple hours — frozen bananas will win you some bonus points with the kids.

1 Serving

¼ cup semisweet chocolate chips

1 teaspoon butter

1 ripe banana

1 egg

2 tablespoons sugar

1 tablespoon cornstarch

½ cup milk (regular or soy)

¼ teaspoon vanilla extract

  • Put the chocolate and butter into a microwave-safe dish. Microwave on low, in 30-second intervals, until the chocolate is melted. Stir well after each interval to see if the chocolate is sufficiently melted.

  • Fork-mash the banana until it is completely creamed.

  • In a small bowl, whisk the egg together with the sugar. When mixed, stir in the cornstarch.

  • Add vanilla and milk, stirring until they are completely combined. Pour in the melted chocolate and banana, stirring to combine.

  • Pour the mixture into a medium saucepan. Heat to scalding, reduce the heat to medium, and stir until the mixture thickens. Keep stirring, or the cornstarch is likely to become lumpy.

  • Once thick, pour the custard into a small heat-proof glass dish and cover it with plastic wrap. Refrigerate for several hours before serving.
