Coconut and Fruit Salad by Shana Priwer and Cynthia Phillips
This salad is a sweet and refreshing departure from regular fruit salad for your toddler. Halved mandarin orange slices are the perfect size for your toddler to pick up.

¼ cup shredded coconut
½ cup pineapple
½ cup mandarin oranges or tangerine
½ cup papaya
Dice the pineapple into small chunks.
If using canned mandarin oranges, slice each piece in half. If using fresh tangerine, peel and remove seeds, and then cut each piece in thirds.
Slice the papaya in half and remove seeds and skin. Cut into small chunks.
Combine the fruits in a baby-safe bowl and mix with the coconut. Refrigerate until ready to use. Fork-mash if desired.
Mandarin Oranges
The mandarin orange is about the size of a tangerine but usually has a redder skin. The clementine is a small, North Afican mandarin orange hybrid. Mandarins are native to Southeast Asia, but are also grown in the warm American Southwest.
