Chicken with Applesauce

While jarred applesauce is perfectly acceptable for this recipe, making your own isn't much trouble either. Try serving this chicken with the Applesauce recipe on page 15. The chicken will also go well with the Peach Sauce recipe on page 16 or the Pear Sauce on page 18. Just about any sweet fruit sauce will go nicely with stuffed chicken.

2 Servings

1 small boneless skinless chicken breast (about 6 ounces)

1 thin slice of cheese (less than 1 ounce)

1 tablespoon all-purpose flour

1 tablespoon oil

¼ cup applesauce (homemade or jarred)

  • Wash the chicken breast and remove any skin or fat. Cut a long diagonal slit across the widest part of the breast and push the cheese inside.

  • Dip the chicken breast into flour, coating all sides. Shake gently to remove any excess.

  • Heat the oil in a skillet. Slide the chicken breast into the hot oil and cook for 3–4 minutes, or until the first side is browned. Flip the breast and cook another 3–4 minutes. Continue cooking until the breast is completely cooked.

  • Heat the oven to 350°F. Place the cooked chicken onto a greased cookie sheet. Pour applesauce on top and bake for 15–20 minutes, or until the applesauce is heated through.

  • Allow to cool, cut into small pieces, and serve. You can also fork-mash if desired.

The Art of Stuffing

Stuffing chicken breasts is one of cooking's more laborious arts, but it's a worthy endeavor when you're experimenting with new recipes to tickle your child's taste buds. The trick to stuffing is aiming low; don't make a huge incision that might run all the way through the meat, and don't try to cram it too full or the stuffing will come out during cooking.
