Scrambled Eggs with Cheese

Use a mild cheese in this recipe, especially if your baby hasn't had a wide variety of cheeses yet. Mozzarella melts particularly well, as does Monterey jack or a mild Cheddar. Avoid sharp cheeses until your baby is more used to them.

1 Serving

1 egg

1 tablespoon milk (regular or soy)

2 tablespoons grated cheese

  • Crack the egg into a bowl and add milk. Beat thoroughly.

  • Pour the egg into a medium-hot non-stick frying pan, adding a bit of oil or butter if the egg starts to stick.

  • Scramble the egg, adding the cheese about halfway through. Continue scrambling until the egg is cooked and cheese melted.

Cooking with Milk

It's safe to cook with milk as long as you're using pasteurized milk. It's safe to scald milk (heat to just below the boiling point), but you don't want to actually boil it — boiling causes a skinlike layer to form on the surface. Always make sure your milk tastes and smells fresh before serving it to your baby.
