Minted Bananas and Strawberries

Bananas and strawberries are always a winning combination, but how about livening them up with a touch of mint? Instead of the fresh mint leaves in this recipe, you can substitute ¼teaspoon dried mint, which you've soaked in 1 teaspoon water or apple juice concentrate for 2 hours.

4 Servings

1 pint fresh strawberries

1 large banana

10 large fresh mint leaves

  • Rinse strawberries and remove hulls (leaves and central core) with a sharp knife. Cut into pieces.

  • Peel banana, removing any brown spots. Cut into pieces.

  • With a sharp knife, cut the mint leaves into thin strips.

  • Place all ingredients in a steamer basket. Place in a pot over about 2 inches of water. Bring to a boil, and steam for about 5 minutes.

  • Serve in pieces, or mash to desired consistency.

Which Mint?

Mint leaves are a great ingredient to add a refreshing taste to everything from lemonade to fruit. You can easily grow mint yourself in your garden or in a pot, or buy fresh leaves at the store in the fresh herb section. If you grow mint yourself, you can choose from peppermint, spearmint, and other varieties.
