Creamy Coconut Lentils by Shana Priwer and Cynthia Phillips
Coconut and lentils provide a new blend of tastes that your baby is sure to enjoy. No time like the present to wake up her taste buds! To increase the chances of her taking kindly to this new dish, be sure to use a mild curry and go easy on the onions.
3 Servings
½ cup lentils
1 teaspoon curry powder
1 cup water
¼ small onion, diced
3 tablespoons coconut, shredded
¼ cup milk (regular or soy)
Bring the water to a rapid boil in a medium saucepan.
Add lentils, onions, and coconut, and reduce water to a simmer. Cook for about 45 minutes, or until the lentils are completely soft.
Add the milk and curry powder, and cook about another 15 minutes.
Allow to cool; then fork-mash before serving.
Coconut Facts
High in potassium and fiber, coconut is a nutritious food that many babies like. According to some research, coconuts also have medicinal value in fighting off infection and fungi, and may even help prevent various diseases. Coconut is high in saturated fat, but okay for babies to have on an occasional basis.
