Baby's Peach Cobbler by Shana Priwer and Cynthia Phillips
Traditional peach cobbler is a baked fruit dish with a sweet biscuit topping. Because most babies wouldn't be able to eat the topping once it's baked and hard, here's a variation on an old favorite, and one that's tailored right to your baby's developing abilities.
Preheat oven to 350°F.
Wash the peach and cut into thin slices. Remove the skin.
Place peach into a small greased baking dish with brown sugar and cinnamon. Give it a quick stir; then bake for 30 minutes, or until peaches are completely soft.
In a small saucepan, bring ½ cup of water to a boil. Add the rice powder and stir for 30 seconds. Cover the pot, turn down the heat to low, and simmer for 7–8 minutes, or until the rice is a smooth, thick consistency. Stir occasionally to prevent sticking.
When the peach is cooked, fork-mash. Mix in the cooked rice cereal until the cobbler reaches the desired consistency.
Cobbling Together a Dessert
Cobblers are fruit desserts that are traditionally cooked in deep-dish pans. They're historically made with whatever fruits are in season; blueberry, blackberry, apricot, and apple are all popular cobbler flavors. Cobblers are distinguished from other baked fruit desserts because they're usually topped with a sweet biscuit dough.
