Windmill Cookies
Traditionally, this dough is shaped in a mold. If you don’t have a mold you can use windmill-shaped cookie cutters.
INGREDIENTS | YIELDS 36 COOKIES
- 2 cups all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ cup dark brown sugar
- 1 teaspoon cinnamon
- ½ teaspoon freshly ground nutmeg
- ¼ teaspoon cloves
- 1/8 teaspoon cardamom
- 1/8 teaspoon ginger
- 1 cup unsalted butter
- ¼ cup milk
- Slivered almonds
Mix dry ingredients. Cut in butter; add milk.
Knead until a firm dough is formed. Chill overnight.
Preheat oven to 350°F. Line a baking sheet with foil.
Roll dough out to ¼" thickness on a floured surface.
Cut with cookie cutters. Sprinkle with almonds.
Bake 15–20 minutes. Cool.
Windmill Cookies
Windmill cookies or Speculaas are a treat enjoyed by Dutch children on December 6, Saint Nicholas’s feast day. The cookies can be made one of two ways: either rolled or sliced thin; or rolled into balls which are then rolled in sugar and flattened with the bottom of a glass. The first cookie is crispy in texture while the second is cake like.
