Windmill Cookies

Traditionally, this dough is shaped in a mold. If you don’t have a mold you can use windmill-shaped cookie cutters.

INGREDIENTS | YIELDS 36 COOKIES

  • 2 cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup dark brown sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon freshly ground nutmeg
  • ¼ teaspoon cloves
  • 1/8 teaspoon cardamom
  • 1/8 teaspoon ginger
  • 1 cup unsalted butter
  • ¼ cup milk
  • Slivered almonds
  1. Mix dry ingredients. Cut in butter; add milk.

  2. Knead until a firm dough is formed. Chill overnight.

  3. Preheat oven to 350°F. Line a baking sheet with foil.

  4. Roll dough out to ¼" thickness on a floured surface.

  5. Cut with cookie cutters. Sprinkle with almonds.

  6. Bake 15–20 minutes. Cool.

Windmill Cookies

Windmill cookies or Speculaas are a treat enjoyed by Dutch children on December 6, Saint Nicholas’s feast day. The cookies can be made one of two ways: either rolled or sliced thin; or rolled into balls which are then rolled in sugar and flattened with the bottom of a glass. The first cookie is crispy in texture while the second is cake like.
