Saltines

These crisp crackers are just as good with soup as the store-bought kind, maybe better. Sprinkle the tops with coarse salt, sesame seed, or leave plain.

INGREDIENTS | YIELDS 100 CRACKERS

  • 2 cups all-purpose flour, whole-wheat flour, or a combination
  • 1 teaspoon salt
  • ½ teaspoon baking soda
  • ¼ cup butter
  • 1½ cups sour milk
  • 1 egg
  1. Preheat oven to 400°F. Lightly grease baking sheet.

  2. Sift dry ingredients into a large bowl.

  3. Cut in butter until coarse crumbs are formed. Add milk and egg; blend together.

  4. Knead dough until smooth. Let rest 10 minutes. Roll very thin on a floured surface.

  5. Cut in squares or other shapes; place on baking sheet and prick with a fork. Sprinkle with salt crystals if desired. Bake 10 minutes.
