Not-Nutter Butters
Rather than flattening these with a fork as with other peanut butter cookies, try using a cookie stamp. You can find cookie stamps at many craft and baking supply stores.
INGREDIENTS | YIELDS 24 COOKIES
- ½ cup shortening
- 2/3 cup sugar
- 1 egg
- ½ teaspoon salt
- 3 tablespoons creamy peanut butter
- ½ cup oats
- 1 cup flour
- 2 tablespoons graham cracker crumbs
- 1 cup creamy peanut butter
- 1½ cups sifted powdered sugar
- Milk if needed to thin filling
Preheat oven to 325°F.
Cream shortening and sugar together until fluffy. Add egg, salt, and peanut butter; blend well.
Process oats until they are a fine powder. Add with flour to shortening mixture; blend until smooth.
Roll into 1" balls; place on cookie sheet. Flatten with a fork or glass dipped in sugar.
Bake 8–10 minutes. Cool.
Mix filling ingredients: graham cracker crumbs, 1 cup peanut butter, and powdered sugar. You may need to add up to ¼ cup milk, a tablespoon at a time, to get the correct consistency for spreading. Sandwich 2 cookies, flat sides together, with filling.
Fancy Sandwich Cookies
Sandwich cookies are special even when they are plain, but you can make them fancy for special days by embellishing them with chocolate. Try dipping half the cookie in melted chocolate and letting it set, or even sprinkling it with chopped nuts while the chocolate is still warm. You can also pipe stripes of melted chocolate across the top. Try different flavored chips for different cookies.
