Kit Kat Bars

These come pretty close to the candy bar. They are best when they are eaten the same day as they are made.

INGREDIENTS | YIELDS 18 BARS

  • 16 ounces Club or Ritz crackers
  • 1 cup light brown sugar
  • 1/3 cup sugar
  • 2 cups graham cracker crumbs
  • 1 cup unsalted butter
  • ½ cup milk
  • 1 cup chocolate chips
  • 1 cup butterscotch chips
  • ¾ cup peanut butter
  1. Line 13" × 9" pan with parchment. Lay a single layer of Club or Ritz crackers on bottom.

  2. Mix brown sugars, sugar, graham cracker crumbs, butter, and milk. Bring to a boil; boil 5 minutes, stirring.

  3. Pour half mixture over crackers; add another layer of crackers. Repeat layers once more.

  4. Melt remaining ingredients together until smooth, stirring constantly. Spread over top cracker layer.

  5. Chill. Cut into bars.

Snack Packs

If you are making cookies or bars ahead of time for school lunches, store them in snack bags by serving sizes. Place all of the snack bags in a large, food-grade container and just grab a snack bag to toss into the lunchbox when needed. The homemade cookies are healthier, tastier, and save money, too.
