Rice Krispie Treats Without Marshmallows
These bars are for those who like the Rice Krispie treats but want a little extra nutrition. The corn syrup and peanut butter hold them together in a sweet, nutty glaze.
INGREDIENTS | YIELDS 36 SQUARES
- 1 cup corn syrup
- ½ cup sugar
- ½ cup brown sugar
- 1½ cups peanut butter
- 5 cups Rice Krispies
Spray 13" × 9" pan with cooking spray; set aside.
Bring corn syrup and sugars to a boil, stirring constantly. Stir in peanut butter.
Add cereal; stir until completely coated.
Remove from heat; spoon into prepared pan, pressing down firmly.
Allow to cool 1 hour. Cut into bars.
Corn Syrup Substitute
If you prefer not to use corn syrup in your cooking, you can easily make a sugar syrup to substitute. To substitute for light corn syrup, mix 2 cups of sugar and 1 cup of water. Bring to a boil and boil for 1 minute. Remove from heat. Add ½ teaspoon of vanilla if you wish. To make a substitute for dark corn syrup, use brown sugar rather than white sugar.
