Raspberry-White Chocolate Blondies

Dried raspberries are often available at the natural food store. They are tangy and full of intense raspberry flavor. If you can’t find them, you can substitute dried blueberries.

INGREDIENTS | YIELDS 16 BARS

  • ½ cup unsalted butter
  • 12 ounces white chocolate chunks
  • 2 eggs
  • ½ cup sugar
  • ½ teaspoon almond extract
  • 1 cup flour
  • ½ teaspoon salt
  • ½ cup dried raspberries
  • ½ cup chopped toasted almonds
  1. Preheat oven to 325°F. Grease and flour 8" square pan.

  2. Melt butter in a microwave-safe bowl. Add half of white chocolate chunks.

  3. Beat eggs and sugar until well blended. Stir in butter mixture and almond extract.

  4. Add flour and salt; stir until blended. Stir in dried raspberries, remaining chocolate chunks, and almonds.

  5. Bake 20 minutes, or until bars are light golden brown and a tester comes out clean. Do not overcook.
