Raisin Cookies

For a unique flavor to these cookies, try substituting the water with an equal amount of your favorite tea. Earl Grey, with its delicate citrus flavor, is perfect.

INGREDIENTS | YIELDS 36 COOKIES

  • ¼ cup unsalted butter
  • ¼ cup vegetable shortening
  • ½ cup brown sugar
  • ¼ cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 3 tablespoons water
  • ¾ cup raisins
  • ½ cup chopped walnuts
  1. Preheat oven to 375°F.

  2. Cream together butter, shortening, and sugars until fluffy. Add egg and vanilla; blend well.

  3. Whisk dry ingredients together to blend; add alternately with water to butter mixture. Stir in raisins and walnuts.

  4. Drop teaspoon-size mounds of dough 2" apart on baking sheet.

  5. Bake 8–10 minutes; do not overcook. Cool completely.
