Oatmeal Raisin Cookies

Part of the reason these cookies ship so well is the moisture from the raisins. If you do not like raisins, substitute dried cranberries, dates, or other dried fruit.

INGREDIENTS | YIELDS 36 COOKIES

  • ½ cup butter
  • ¾ cup vegetable shortening
  • ½ cup sugar
  • ¾ cup brown sugar
  • 1 egg
  • 1½ teaspoons vanilla
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon freshly ground nutmeg
  • 1 teaspoon salt
  • 3 cups old-fashioned oats
  • 1½ cups raisins
  1. Preheat oven to 375°F.

  2. Beat butter, shortening, and sugars until fluffy. Add egg and vanilla; blend well.

  3. Sift flour, baking soda, cinnamon, nutmeg, and salt. Stir into butter mixture. Blend in oats and raisins.

  4. Drop by teaspoons onto prepared baking sheet.

  5. Bake 8–10 minutes. Cool a few minutes before removing from baking sheet. Cool completely before wrapping to ship.

You can buy different-sized boxes at many office supply stores. If you are shipping several different types of cookies, it may be worth it to buy separate small boxes for each and fit them all in the main box. This will keep your cookies from sharing flavors as well as give them more protection during mailing.
