Cranberry Oatmeal Cookies

Any dried fruit or mixture of dried fruit is great in these chewy cookies. Quick oats can be substituted for the old-fashioned oats if necessary.

INGREDIENTS | YIELDS 24 COOKIES

  • ½ cup unsalted butter
  • ½ cup vegetable shortening
  • ¾ cup packed brown sugar
  • ¾ cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2¼ cups old-fashioned oats
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 cups dried cranberries
  • 2 tablespoons orange zest
  • 1 cup chopped pecans
  1. Preheat oven to 350°F. Line a baking sheet with parchment.

  2. Beat butter, shortening, sugars, eggs, and vanilla together until creamy.

  3. Whisk dry ingredients together; add to butter mixture, blending well.

  4. Mix in dried cranberries, orange zest, and pecans.

  5. Drop by generous teaspoonfuls on baking sheet; bake 10–12 minutes, or until done. Cookies should be slightly undercooked when they come out of oven. Cool completely.
