Cranberry Oatmeal Cookies
Any dried fruit or mixture of dried fruit is great in these chewy cookies. Quick oats can be substituted for the old-fashioned oats if necessary.
INGREDIENTS | YIELDS 24 COOKIES
- ½ cup unsalted butter
- ½ cup vegetable shortening
- ¾ cup packed brown sugar
- ¾ cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 2¼ cups old-fashioned oats
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- 2 cups dried cranberries
- 2 tablespoons orange zest
- 1 cup chopped pecans
Preheat oven to 350°F. Line a baking sheet with parchment.
Beat butter, shortening, sugars, eggs, and vanilla together until creamy.
Whisk dry ingredients together; add to butter mixture, blending well.
Mix in dried cranberries, orange zest, and pecans.
Drop by generous teaspoonfuls on baking sheet; bake 10–12 minutes, or until done. Cookies should be slightly undercooked when they come out of oven. Cool completely.
