Maple Sugar Cookies

These are a subtle-tasting maple cookie and not too sweet. For more maple flavor, you can increase the maple flavoring to 2 teaspoons.

INGREDIENTS | YIELDS 48 COOKIES

  • ½ cup unsalted butter
  • ½ cup vegetable shortening
  • ¾ cup light brown sugar
  • 2 eggs
  • ½ cup grade-B maple syrup
  • 1 teaspoon maple flavoring
  • 4 cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • Confectioners’ Glaze, flavored to taste with maple flavoring, about ¼ teaspoon
  1. Cream butter and shortening until blended. Add brown sugar; beat until fluffy. Blend in eggs, syrup, and maple flavoring.

  2. Sift dry ingredients; stir into butter mixture. Gather into a ball. Cover with plastic wrap; chill several hours, or overnight.

  3. Preheat oven to 350°F. Lightly grease a cookie sheet.

  4. Roll dough out on a lightly floured surface. Keep dough you are not working with in refrigerator. Cut into shapes; transfer to baking sheet.

  5. Bake 10–12 minutes, or until golden brown. Cool and glaze.

Extra Cookie Sheets

Ideally, you should have three cookie sheets: one for the dough; one in the oven; and one cooling and ready for the next batch. In real life this isn’t always the case, but you can easily remedy that: Just use sheets of parchment the same size as your baking sheets. When one batch of cookies is done, pull the parchment off the baking sheet and replace with the cookie-filled parchment.
