Lavender Diamonds
Lavender has an unusual flowery-citrus flavor that goes well with lemon or vanilla. Both are used here to give the cookies a complex yet mellow flavor.
INGREDIENTS | YIELDS 24 COOKIES
- 1½ cups butter, room temperature
- 2/3 cup sugar
- ¼ cup confectioners’ sugar
- 1 tablespoon lavender flowers, chopped fine
- 1 teaspoon lemon zest
- 1 teaspoon vanilla
- 2½ cups all-purpose flour
- ½ cup cornstarch
- ¼ teaspoon salt
Cream butter and sugars. Add lavender, lemon zest, and vanilla; blend well.
Whisk dry ingredients together; blend into butter mixture. Chill dough overnight.
Preheat oven to 325°F. Line a baking sheet with parchment.
Roll out chilled dough ¼" thick on floured surface. Cut into diamonds; place on baking sheets. Sprinkle with sugar.
Bake 15–20 minutes, or until done.
Baking with Lavender
Lavender is a very fragrant herb often used in cooking and baking. You can make a delicious lavender sugar by placing 1 tablespoon of lavender flowers in a cheesecloth bag and sealing it with 2 cups of sugar for a day or so. The sugar will pick up the lavender flavor and is delicious as a garnish on top of cookies.
