Key Lime Cutouts
Key limes are tiny limes that grow on the Florida Keys. They are sometimes available seasonally, but most often you will find the juice near the other citrus juices in the grocery store. Regular limes may be substituted if necessary.
INGREDIENTS | YIELDS 48 COOKIES
- 1 tablespoon peanut oil
- 1½ teaspoons key lime zest
- 1/3 cup key lime juice
- 1¾ cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- 1/8 teaspoon salt
- ½ cup unsalted butter
- 2/3 cup sugar
- 1½ teaspoons vanilla extract
- ½ teaspoon lemon extract
- Sugar for sprinkling
Preheat oven to 350°F. Line a baking sheet with parchment. Combine oil and lime zest; set aside.
In a microwave-safe bowl, microwave lime juice on high until it is reduced to 3 tablespoons. Time will vary according to many factors, including humidity. Plan on about 5 minutes. You can also reduce the juice on top of the stove. Let cool.
Sift dry ingredients together; set aside.
Cream butter and sugar until fluffy. Add oil mixture, vanilla, lemon extract, and lime reduction. Stir in dry ingredients until well blended.
Dough should be somewhat stiff. If not, chill 30 minutes.
Roll dough out ¼" thick between sheets of waxed paper. Place in freezer about 10 minutes to firm up.
Cut with cookie cutters; transfer to lined baking sheets. If dough begins to be too soft, put back in freezer to chill a few minutes. Sprinkle with sugar.
Bake 8–10 minutes, or until done.
