Key Lime-and-Strawberry Sandwich Cookies

The finished cookies will need to be kept refrigerated once chilled. If you choose to use the cream cheese frosting, just add 1 tablespoon key lime juice and 1 teaspoon lime zest for flavoring. Either way, these cookies are delicious.

INGREDIENTS | YIELDS 30 COOKIES

  • 1½ cups unsalted butter
  • 1 cup sugar
  • 1 egg
  • 2 packages (4-serving size) strawberry gelatin
  • 1½ teaspoons vanilla
  • 3½ cups flour
  • 1 teaspoon baking powder
  • Lime Curd or Cream Cheese Frosting
  1. Cream butter and sugar until light and fluffy. Add egg, 1½ packages of gelatin, and vanilla; blend well.

  2. Sift flour and baking powder together; blend into creamed mixture. Form into a 2" diameter roll; wrap in wax paper. Chill overnight.

  3. Preheat oven to 400°F. Line a baking sheet with parchment.

  4. Slice cookies ¼" thick; place on parchment. Sprinkle half of cookies with remaining gelatin. Bake 8–10 minutes, or until done. Cool completely.

  5. Spread chosen filling on one cookie and top with another. Refrigerate until ready to serve.

Varying Flavors

Any flavor of gelatin can be used for these sandwich cookies. Try orange or raspberry gelatin with Ganache filling, lemon with vanilla filling, or even cherry with almond filling. The cookies are very colorful, and they make a great party food. You can also add a festive touch by rolling the logs in the gelatin powder or colored sprinkles so when you cut the cookies the edges are decorated.
