Easy Homemade Graham Crackers

Whole-wheat graham flour is different than whole-wheat flour. You may be able to find it in the natural foods section of your grocery store. If not, it is available on the Internet. Bob’s Red Mill has wonderful graham flour and it is usually easy to find.

INGREDIENTS | YIELDS 48 CRACKERS

  • ¾ cup unbleached all-purpose flour
  • 1½ cups whole-wheat graham flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ teaspoon ground cinnamon
  • ¼ cup sugar
  • ¼ cup brown sugar
  • ½ cup cold unsalted butter, cut into pieces
  • ¼ cup honey
  • ¼ cup cold water
  • 1 teaspoon vanilla or maple extract
  1. In a food processor, mix together dry ingredients and sugars. Pulse until blended.

  2. Add butter; pulse until mixture resembles coarse crumbs. Add honey, water, and extract; mix until dough forms a ball.

  3. Roll dough ½" thick between 2 sheets of waxed paper. Chill 1 hour.

  4. Preheat oven to 350°F. Line a baking sheet with parchment. Roll chilled dough 1/8" thick; cut into desired shapes, or squares. Prick holes in crackers with a fork; sprinkle turbinado sugar over tops.

  5. Bake 15 minutes, or until lightly browned. Cool crackers completely.
