Butterscotch Cookies

If you like crunchy cookies, leave these old-fashioned treats in the oven for the full 10 minutes, checking often to make sure they do not scorch.

INGREDIENTS | YIELDS 36 COOKIES

  • 1 cup brown sugar
  • ½ cup butter, softened
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • ½ teaspoon salt
  • 1¾ cups flour
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • Pinch freshly grated nutmeg
  1. Cream brown sugar and butter until fluffy. Add egg and vanilla; beat well.

  2. Whisk dry ingredients together; stir into butter mixture.

  3. Chill overnight.

  4. Preheat oven to 350°F. Roll out dough on lightly floured surface. Cut into shapes.

  5. Bake 8–10 minutes. Allow to cool before removing from baking sheets.
