Tea Dainties
Delicate cookies are unusual with the distinct flavor of Earl Grey tea. An easy way to blend the tea to a powder is to place it with ¼ cup of the flour in a blender.
INGREDIENTS | YIELDS 36 COOKIES
- 1 cup unsalted butter
- ½ cup confectioners’ sugar
- ¼ teaspoon salt
- 2 tablespoons Earl Grey tea, ground to a powder
- 1 teaspoon orange peel, grated
- 2¼ cups all-purpose flour
- ¾ cup finely chopped pecans, if desired
Cream butter and sugar until light and fluffy. Add remaining ingredients; blend well.
Chill overnight.
Preheat oven to 400°F. Line a baking sheet with parchment.
Roll dough into 1" balls; place on baking sheets.
Bake 10–12 minutes. Cool.
Tea Cookies
Tea cookies can really be any type of cookie that is made in a diminutive size. They are generally a delicate texture and light flavor, and that makes them perfect to serve with other delights on a tea tray. Tea cookies do not tend to ship well because of their delicate nature; however, they generally keep well at room temperature for up to two weeks.
