Peanut Butter Cookies
Classic peanut butter cookies are everyone’s childhood favorite. They can be made with crunchy or creamy peanut butter, your choice. Either way is delicious.
INGREDIENTS | YIELDS 72 COOKIES
- 2½ cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- ½ cup unsalted butter
- ½ cup vegetable shortening
- 1 cup peanut butter
- 1 cup sugar
- 1 cup firmly packed brown sugar
- 2 eggs, beaten
- 1 teaspoon vanilla
Preheat oven to 350°F. Stir together dry ingredients; set aside.
Cream butter, shortening, and peanut butter until smooth. Add sugars; blend well.
Beat in eggs and vanilla.
Stir in flour mixture; blend well.
Shape dough into 1" balls. Place on an ungreased cookie sheet 2" apart. Flatten with a fork dipped in flour. Flatten in other direction to create little squares on dough.
Bake 8–10 minutes for chewy cookies and 12–14 minutes for crispy cookies. Cool.
Peanut Butter Sandwich Cookies
A great variation on peanut butter cookies is to sandwich them together with either the Ganache or a mixture made up of equal amounts of peanut butter and honey. Just spoon a layer of the desired filling on the flat bottom side of the cookie and top it with another cookie, flat side toward center.
