Lemon Bon Bons

The frosting should be divided and tinted several pastel colors to make these pretty cookies. You can substitute pecans for the pistachios.

INGREDIENTS | YIELDS 36 COOKIES

  • 1 cup unsalted butter
  • 1/3 cup confectioners’ sugar
  • ¾ cup cornstarch
  • 1 teaspoon grated lemon peel
  • 1¼ cups all-purpose flour
  • ½ cup pistachios, finely chopped

Frosting

  • 1 cup confectioners’ sugar
  • 1 teaspoon unsalted butter, melted
  • 2 tablespoons lemon juice
  • Food coloring
  1. Beat butter and sugar until light and fluffy. Add cornstarch, lemon peel, and flour; blend well. Chill overnight.

  2. Preheat oven to 350°F. Line a baking sheet with parchment.

  3. Roll cookie dough in 1" balls. Roll in pistachios; place on baking sheet. Flatten with bottom of a glass. Bake 12–15 minutes.

  4. Meanwhile, prepare frosting. Mix frosting ingredients until smooth. Divide into equal parts; tint each a different color.

  5. Frost tops of cooled cookies with frosting.

Paste Food Coloring for More Colorful Cookies

Paste food coloring is a thick food coloring that allows you to create deeper, more intense colors in frostings and glazes. Just dip a toothpick in the desired color and stir into the frosting. Continue this way, adding a little at a time until you reach the color you want.
