Chocolate Turtle Cookies

Just like the candy only with a cookie bottom, these turtle cookies will be a favorite in your house. Substitute any chocolate for the milk chocolate called for in this recipe.

INGREDIENTS | SERVES 36

  • ¾ cup unsalted butter
  • ¾ cup powdered sugar
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla
  • 2 cups flour
  • 25 caramels, unwrapped
  • 3 tablespoons heavy cream
  • 3 tablespoons unsalted butter
  • ½ cup powdered sugar
  • 1 cup pecans, chopped
  • ½ cup milk chocolate chips
  • 1 tablespoon unsalted butter
  • 1 teaspoon vanilla
  • 2 tablespoons powdered sugar
  1. Combine ¾ cup butter, ¾ cup powdered sugar, 2 tablespoons cream, and 1 teaspoon vanilla. Beat until smooth; then add flour. Seal in an airtight package; chill several hours or overnight.

  2. Preheat oven to 325°F.

  3. Roll teaspoons of dough into 1" balls. Place on an ungreased cookie sheet and flatten to about ¼" thickness with the bottom of a glass. Bake 8–10 minutes, until set and light golden brown. Cool completely.

  4. In microwave on medium power, melt caramels with 3 tablespoons cream and 3 tablespoons butter. Stir in ½ cup powdered sugar and chopped nuts. Place a spoonful on top of each cooled cookie.

  5. In microwave-safe bowl, place milk and semisweet chocolate chips along with 1 tablespoon butter. Microwave on medium power 1–2 minutes, stirring once during cooking time, until melted and smooth. Stir in 1 teaspoon vanilla and 2 tablespoons powdered sugar until smooth. Spoon a small amount of chocolate mixture over caramel mixture. Cool.
