Graham Cracker Chews

For a variation on this recipe, add ½ cup white chocolate chips and ½ cup chocolate chips in with the nuts.

INGREDIENTS | YIELDS 24 BARS

Crust

  • 1½ cups graham cracker crumbs
  • 2 tablespoons all-purpose flour
  • ½ cup unsalted butter

Topping

  • 2 eggs, beaten
  • 1 teaspoon vanilla
  • 1½ cups brown sugar
  • ½ cup chopped pecans
  1. Preheat oven to 350°F. Butter 9" × 9" pan; set aside.

  2. Combine 1½ cups of graham cracker crumbs and flour in a bowl. Add butter with your fingers until mixture is crumbly.

  3. Press crumbs into pan; bake 30 minutes.

  4. Mix eggs and vanilla in a bowl until frothy.

  5. Blend remaining ingredients together; stir into egg mixture. Pour over baked crust.

  6. Bake 20 minutes, or until set. Cool completely.

When to Cut the Bars?

Most bar cookies should be cut when they have cooled completely. Brownies, Blondies, and any other bar that is soft should be cut when completely cool for the very best results. Bars that are crunchy when they have cooled need to be cut while still warm to look their best.
