Dulce de Leche Bars

These sweet bars should be stored in the refrigerator if they are not eaten right away. For a praline flavor, add 2 cups chopped pecans over the caramel layer.

INGREDIENTS | YIELDS 36 BARS

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup butter, softened
  • 1 cup firmly packed brown sugar
  • 2 eggs
  • 1½ teaspoons vanilla
  • 1 (14-ounce) package caramels
  • ½ cup heavy cream
  1. Preheat oven to 350°F. Butter 13" × 9" pan; set aside.

  2. Sift flour, baking soda, and salt into a bowl; set aside.

  3. Beat butter and brown sugar until fluffy. Add eggs and vanilla; beat until smooth. Stir in flour mixture.

  4. Spread half of dough in prepared pan. Bake 8 minutes. Allow to cool while preparing caramel mixture.

  5. Melt caramels with cream in microwave, stirring often. Reserve ¼ cup caramel mixture; pour rest over baked layer.

  6. Crumble remaining dough over top.

  7. Bake 25 minutes, or until golden. Cool completely. Drizzle reserved caramel over top.

Dulce de Leche: Sweet Milk

Dulce de leche is a combination of milk and sugar that is slowly cooked for hours. It is popular in many desserts and can be used as a sauce. Making it with caramels and heavy cream is cheating a bit…but so much easier. For the real thing, check your grocer’s Latin food section.
