Chocolate Chip Brittle Cookies

These irregularly shaped bars are halfway between a cookie and a candy. Do not omit the nuts in this recipe, although you can use different nuts if you wish.

INGREDIENTS | YIELDS 48 COOKIES

  • 1 cup unsalted butter
  • 1 cup sugar
  • 2 teaspoons vanilla
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 12 ounces chocolate chips
  • 1 cup toasted almonds
  1. Preheat oven to 375°F.

  2. Cream together butter, sugar, and vanilla. Beat in flour and salt.

  3. Stir in almonds and half of the chocolate chips.

  4. Press gently into 15" × 10" jelly roll pan; bake 20–25 minutes. Cool.

  5. Microwave rest of chocolate chips until melted. Drizzle over cookies. Break in irregular pieces.

How to Toast Almonds

Toasting nuts gives them a better, deeper flavor. Nuts of any sort are very easy to toast for your recipes. Just spread the nuts on a cookie sheet in one layer and bake in a 375°F oven for 10 minutes or so. Watch them carefully so that they don’t burn.
