Chocolate Chip Brittle Cookies
These irregularly shaped bars are halfway between a cookie and a candy. Do not omit the nuts in this recipe, although you can use different nuts if you wish.
INGREDIENTS | YIELDS 48 COOKIES
- 1 cup unsalted butter
- 1 cup sugar
- 2 teaspoons vanilla
- 2 cups all-purpose flour
- 1 teaspoon salt
- 12 ounces chocolate chips
- 1 cup toasted almonds
Preheat oven to 375°F.
Cream together butter, sugar, and vanilla. Beat in flour and salt.
Stir in almonds and half of the chocolate chips.
Press gently into 15" × 10" jelly roll pan; bake 20–25 minutes. Cool.
Microwave rest of chocolate chips until melted. Drizzle over cookies. Break in irregular pieces.
How to Toast Almonds
Toasting nuts gives them a better, deeper flavor. Nuts of any sort are very easy to toast for your recipes. Just spread the nuts on a cookie sheet in one layer and bake in a 375°F oven for 10 minutes or so. Watch them carefully so that they don’t burn.
