Oatmeal Cream Pies
These are basically just oatmeal Whoopie Pies. The cookie is a bit more prone to crumbling than the other types of Whoopie Pies, so handle with care. Different fillings can be used successfully, including the Date Filling.
INGREDIENTS | YIELDS 20 COOKIES
- ½ cup unsalted butter
- ¼ cup vegetable shortening
- 2 cups brown sugar
- 2 eggs
- 1 teaspoon baking soda
- 3 tablespoons boiling water
- ½ teaspoon salt
- 2 cups flour
- 2 cups quick-cooking oatmeal
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- Cream Filling for Whoopie Pies
Preheat oven to 350°F. Line cookies sheets with parchment.
Cream butter, shortening, and sugar until fluffy. Add eggs; beat well.
Combine baking soda and water; add to creamed mixture, beating in carefully.
Combine dry ingredients; stir into creamed mixture.
Drop by rounded tablespoons onto parchment-lined cookie sheets. Bake 10–12 minutes. Cool completely before filling.
