Oatmeal Cream Pies

These are basically just oatmeal Whoopie Pies. The cookie is a bit more prone to crumbling than the other types of Whoopie Pies, so handle with care. Different fillings can be used successfully, including the Date Filling.

INGREDIENTS | YIELDS 20 COOKIES

  • ½ cup unsalted butter
  • ¼ cup vegetable shortening
  • 2 cups brown sugar
  • 2 eggs
  • 1 teaspoon baking soda
  • 3 tablespoons boiling water
  • ½ teaspoon salt
  • 2 cups flour
  • 2 cups quick-cooking oatmeal
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • Cream Filling for Whoopie Pies
  1. Preheat oven to 350°F. Line cookies sheets with parchment.

  2. Cream butter, shortening, and sugar until fluffy. Add eggs; beat well.

  3. Combine baking soda and water; add to creamed mixture, beating in carefully.

  4. Combine dry ingredients; stir into creamed mixture.

  5. Drop by rounded tablespoons onto parchment-lined cookie sheets. Bake 10–12 minutes. Cool completely before filling.
