Creamy Peanut Butter Frosting
This rich frosting can be used to sandwich peanut butter cookies together, between chocolate cookies, or in thumbprint cookies. Use it with Whoopie Pies or as a frosting for brownies.
INGREDIENTS | YIELDS 2 CUPS
- ½ cup softened unsalted butter
- 1 cup peanut butter
- 2 cups confectioners’ sugar
- 3 tablespoons heavy cream
Beat butter and peanut butter until smooth and well blended.
Mix in sugar, 1 cup at a time.
Use enough heavy cream to make correct consistency.
The Other Butters
Peanut butter does make a delicious frosting or filling, but it can be overpowering with some flavors. If you find you want something a little less “nutty,” try almond butter, cashew butter, or even sunflower seed butter. These butters resemble peanut butter, but the taste is much lighter. They are usually available at natural food stores and some grocers.
