Cream Cheese Frosting
This is a simple but flavorful cream cheese frosting. You can add ¼ cup finely chopped candied ginger for a spicy variation.
INGREDIENTS | YIELDS 3 CUPS
- 8 ounces cream cheese, not light or nonfat
- 1/3 cup unsalted butter
- 3 teaspoons vanilla
- 4 cups confectioners’ sugar
- 1 tablespoon heavy cream, if needed
Mix cream cheese and butter until well blended. Beat in the vanilla.
Slowly beat in confectioners’ sugar until proper consistency is reached. If frosting is too thick when all of confectioners’ sugar has been used, add cream to thin it out a little.
Filling Panache
For exceptionally pretty filled cookies, use an icing bag fitted with a large star or shell tip to pipe the frosting onto the surface of the bottom cookie. Place the other cookie on top and press gently. Rather than just a blob of frosting inside the cookie, you will have ridges and a professional finish to your sandwich cookies.
