Chocolate Glaze

You can use dark chocolate, bittersweet, German’s Sweet chocolate, semisweet, milk chocolate, or a combination in the recipe to get exactly the flavor you want.

INGREDIENTS | YIELDS 1 CUP

  • ¾ cup chocolate, chopped
  • 3 tablespoons butter
  • 1 tablespoon light corn syrup
  • ½ teaspoon vanilla
  1. Combine chocolate, butter, and corn syrup in a double boiler. DO NOT let water get above a simmer.

  2. Stir until ingredients melt together and are smooth.

  3. Remove from heat.

  4. Add vanilla; blend well.

  5. Use while warm.

Chocolate Seizing

If even a little bit of water gets into the chocolate when you are melting it, seizing will occur. The chocolate lumps up, refuses to melt, and must be thrown away. To keep this from happening, always wipe the utensils with a dry towel before using and never cover the pot of chocolate while melting. Dry your hands thoroughly before stirring so no water drips into the melting chocolate. Your chocolate will always melt just right
